Provence is one of the most beautiful places in the world. Those who live in Europe are highly dependent of the wonderful agricultural products that come from these areas that surround the Mediterranean Sea. The fragrances of the aromatized olives, the oils, the fresh fruits when in season, are paralleled by the history and culture. Many years ago, I traveled to Italy and fell in love with their appreciation towards incredible agricultural products. Although Italy has grown into many regions, we find Tuscany to be the best at producing high quality ingredients from wonderful agricultural products for you, the chef : from olive oils, to marinated and grilled vegetables that have won numerous awards in Outstanding Foodservice category at the Fancy Food Show, to the white anchovies recognized as Best Seafood. Our artichoke paste, our grilled marinated antipasto, vine-ripened sauces and pastas were once used for celebrating of Sunday in Tuscany of old.

Tradition. This is the only way to make a wonderful balsamic vinegar. Trebbiano grapes are juiced and moved from barrel to barrel over a long period of time. These barrels are housed in barns of old in Modena, Italy. A true flavoring of natural woods over time, never corking the barrel, but placing a small stone from the local river in Modena in order to allow the balsamic to dissipate in a slow, gradual way, is what makes our balsamic vinegar from Modena the finest in the world
We offer this vinegar at different maturities, 3-, 8-, 12-, or 25-year old is available. Your choice is based on the density and flavor of age you search out.
Jansal Valley
Sid Wainer & Son is descended from a third generation produce company which sold produce off push carts on the cobblestone streets of what was at that time the seafood capital of the world and whaling was still one of the main industries in the port of New Bedford. They dealt with farms throughout the south coast of New England. The topography was warm from the jet stream that travels up the East Coast of the United States. These relationships, three generations later, still exist. We've expanded upon those relationships and now have developed an agricultural bond with farms that grow exclusively for us, practicing the sustainable agriculture that we are so dedicated to for not only ourselves, but for future generations.
