Cannellini and Black Forest Ham Salad

Ingredients

1 pound
Cannellini Beans (soaked overnight)
3  
Bulbs Fennel (washed and thinly sliced)
2  
Large Red Onions (peeled and thinly sliced)
2  
Large Carrots (peeled and thinly sliced)
1  
Large Red Pepper (seeded and sliced)
1 bunch
Italian Parsley (washed and finely diced)
2 tablespoons
Basil (thinly sliced)
   
Salt & Pepper (to taste)

Instructions

Bring a pot of fresh water to a boil and add cannellini beans. When beans are cooked, drain excess water and place beans in a large bowl. Dice the black forest ham and add to the beans. Slice fennel, carrots, onions, and peppers, and add to the beans and ham. Dress with the merlot vinegar and olive oil. Garnish with parsley and fresh basil.
