Curry Chicken Salad

Ingredients

Smoked Chicken Breast (diced)
1 tablespoon
Light Mayo
3 teaspoons
Indian Madras Curry
1 cup
Red Grapes (halved)
1⁄2 cup
Raw Sliced Almonds (toasted)
2  
Stalks Celery (¼” diced)
1⁄2 pound
Jansal Valley Mesclun Mix
6 tablespoons
Extra Virgin Olive Oil
   
Salt and Pepper

Instructions

Mix chicken, mayo, curry, grapes, almonds, and celery together in a bowl. Set Aside. In a small bowl, whisk the white balsamic and olive oil until incorporated, season with salt and pepper. Toss vinaigrette with spring mix and top with the chicken salad. Serve Immediately.
