Our most precious balsamic vinegar, this exceptional variety is aged to perfection reaching a density of 1.36 and minimum 6% acidity, resulting in a fruity and nuanced flavor with a bright, delicate finish and aromatic flavors of oak, due to aging, with a smooth finish. Our exceptional Balsamic Vinegars of Modena are certified I.G.P. Aligned with strict legislation, they are made with only Fortana, Trebbiano, Lambrusco, Sangiovese, Albana, Ancellotta, and Montuni grapes frown in Italy's Emilia Romagna Region. The grapes are picked late in the harvesting season to ensure the highest brix/sugar content. The Balsamic Vinegar is made using a blend of minimum 20% grape must to vinegar ratio and aged a minimum of three years in chestnut, mulberry, juniper, and oak barrels. The final densities must be between 1.25-1.37 depending on the desired flavor and viscosity.
