Despite sounding like a grain, buckwheat is actually related to rhubarb. When buckwheat is hulled it is a cream color and only turns brown after being toasted. Small and angular, with a walnut cocoa flavor, it is called kasha after being roasted. Buckwheat flour is finely ground buckwheat.
