This pasteurized Holstein and Jersey cow's milk crottin, described as a "breath of fresh air," took first place in the 2016 American Cheese Society competition. Its tangy, nutty, buttery flavor coats the mouth with creamy texture. It can be spread over a warm baguette, paired with charcuterie, or drizzled with honey and topped with berries. For a slightly different application, it can also be aged for several weeks in its original packaging until it hardens to develop a more dense texture perfect for grating or slicing.
