Our latest addition from Crown Finish Caves is a Vacherin Mont D'Or style pasteurized cow's milk cheese made by Consider Bardwell Farm in Vermont. Once it arrives at CFC, the cheese is wrapped in spruce bark harvested in the Adirondack Mountains and Aged for 60 days in the affineur's lagering tunnels below Brooklyn, NY. The result is a robust flavor with buttery and woodsy notes and a luscious, gooey, spoonable texture. Serve with caramelized onions and cornichons; pair with a red Cote du Rhone.
